Will this automatic Soap Dispenser work well if I use Purell Hand Sanitizer in it instead? Will it evaporate?

Yes it should work fine. If you have ever noticed at some resturants or stores there is a dispenser on the wall near the Soap Dispensers that contain Hand Sanitizer in them. That is a neat idea. i have soap and hand sanitizer in my bathroom for the lazy people that don’t wash their hands at least use the sanitizer please LOL
